I fell for this trade the same way people fall for traditional tattooing — a small set of rules, done exceptionally well, over and over until it becomes yours. Bold lines. Solid color. Nothing fussy.

Years of service bars and cocktail rooms taught me speed. Years of guests taught me the rest: read the room, remember the order, keep the water coming. The drinks are the craft, but the hospitality is the job.
